WATSONVILLE, CA - Healthy eating is here to stay! Monterey Mushrooms is helping shoppers stay true to their New Year’s health resolutions with the release of four weekly meal plans, resulting in 16 fast, flavor-packed recipes.

“We are leveraging a campaign the Mushroom Council created to help increase consumption,” Mike Stephan, Vice President of Sales, shared exclusively with ANUK. “This is not a one-and-done campaign. Instead, we plan to promote Real Food, Real Fast recipes throughout the year and we hope all mushroom suppliers will do the same. These recipes will help increase consumption by giving consumers ideas to make easy and healthy meals at home. We invite and encourage our retail customers to share these recipes as well.”

Each of these creative recipes doubles down on the demand for convenience, as they can be made in under 30 minutes and require only 10 ingredients or less. With a host of unique options, the recipes also serve up the trendsetting global flavors that consumers currently crave, a press release explained.

• Coconut Mushroom Curry with Spinach and Chickpeas
• Mushroom Pizza with Feta and Kalamata Olives
• Vegan “Carnitas” Mushroom Tacos
