Cauliflower on Trend to Possibly Become the New Kale in Canada
Cauliflower is on target to potentially become the new kale in 2014, says food trend watchers. The versatile vegetable is gaining even bigger buzz in culinary circles and could stand to be a worthy rival to the superfood, according to Canadian news publication Metro.
“Kale had that buzz and everybody loves kale chips and how many restaurants have we seen that have kale on the menu, but cauliflower is certainly the huge buzz this year. Bigger than ever,” says Christine Couvelier, executive chef and global culinary trendologist.
Cauliflower can be mashed, grilled, broiled, served on its own, in salads, or tossed with herbs, vinegars, and oils.
Other food trend watchers like Dana McCauley, vice president of marketing for Plats du Chef Foods, are predicting that Swiss chard, another popular super green, could also possibly take over kale. Cauliflower still remains as the number one pick for 2014, however. “I was surprised when I heard people talking so much about Swiss chard because I think that Cauliflower probably has a bigger chance of being a rival for kale than other veggies,” she said.
