Little Bear Produce's Jimmy Bassetti Talks Honeysuckle Red Onions
EDINBURG, TX - This spring marked the arrival of a unique new onion variety from our friends at Little Bear Produce, with its sweeter-than-ever proprietary Honeysuckle Red Onions popping out of the rich Texas soil for the first time ever. Having heard tale of this truly subtle red onion, I just had to ask Partner Jimmy Bassetti to spill a few more details about Honeysuckle reds when I caught up with him earlier this year.
“You can cut them, there’s no tearing, no crying—kids can eat them,” Jimmy tells me as we talk about what sets these onions apart from others you may see on the market. “They’re very mild in salads, and they add a little bit of color to dishes. Having the red color is also a great promotion for nutritional value.”
What really sets this gem apart, however, is the acid level, or the pyruvates. While some onions can reach levels from between 5 and 9, Jimmy tells me Honeysuckle Reds sit firmly around 3 or 3.5. This is what gives Little Bear’s new onion its mild, and even sweet, taste.
