Yellow Tomatoes Being Used As Eggs Yolks in Plant-Based Dishes

Like me, your initial reaction might be “egg-scuse me?” But over at Los Angeles-based Crossroads Kitchen, the tomato truly did come first as the restaurant serves eggs made out of—wait for it—yellow tomatoes! In doing so, Crossroads Kitchen has truly changed the plant-based game, and we had to investigate to see whether the tomato eggs are all they’re cracked up to be.
The news source states that the restaurant aims to make plant-based dishes out of real food, as opposed to lab creations made to resemble animal products. In my book, that philosophy is pretty hard to beat. Although Crossroads Kitchen hasn’t revealed the top-secret tomato egg recipe, the source confirmed that these yolks are comprised of pureed yellow tomatoes and Indian black salt, which supposedly mimics the sulfurous qualities of real eggs. The mixture is then contained within a “special liquid,” providing the well-known jiggle of an uncooked yolk.
